Smoked Egg Method (Recommended: Hot or Cold Smoking)

Please note that the smoking time should be adjusted based on the size of the eggs and to avoid excessive smoking, as eggs can become overly firm when exposed to high heat during smoking.

Eggs are best smoked using moderate indirect heat to prevent them from becoming too hard.

Smoking Method (Recommended Warm Smoking):

Temperature: Medium indirect heat

Smoking eggs at high temperatures can make them overly firm, so it's best to use medium indirect heat. The specific temperature can vary based on your smoker's settings, but generally around 100-120°C (212-248°F) works well.

Time: Approximately 20-30 minutes

Smoking time for eggs varies depending on their size, but typically around 20-30 minutes is a good guideline. The eggs absorb the flavor during the exposure to smoke, so be cautious not to over-smoke them.

Instructions:

  1. Prepare the Eggs: Bring the eggs to room temperature and remove them from the refrigerator.

  2. Puncture the Eggs: Use a pin to make small holes at both ends of the eggs. This helps regulate the internal pressure, preventing them from cracking during smoking.

  3. Prepare Smoking Chips: If using a smoker, soak smoking chips in water for a while and drain excess water. This ensures that the smoking chips burn longer during the process.

  4. Smoke the Eggs: Place damp smoking chips. Put the eggs on the rack and position them inside the smoker. Close the lid and smoke the eggs at medium indirect heat. Smoking time varies based on egg size, but generally 20-30 minutes is recommended.

  5. Retrieve the Smoked Eggs: Once smoking is done, remove the smoked eggs and quickly cool them by placing them in cold water. Rapid cooling enhances the depth of the smoky flavor.

  6. Peel and Use: Peel the cooled smoked eggs and use them in various culinary creations.

Recommended Smoking Chips:

  • Applewood Chips: Known for their fruity and sweet aroma, applewood chips complement eggs beautifully, providing a gentle smoky essence.

  • Cherrywood Chips: With a mild sweetness and subtle smokiness, cherrywood chips enhance eggs with a delicate flavor.

Ingredients:

  • Smoked eggs (using the above recipe)
  • Vegetables (e.g., lettuce, tomato, cucumber)
  • Olive oil
  • Lemon juice
  • Salt, pepper

Instructions:

  1. Prepare Smoked Eggs: Peel and cut the smoked eggs into suitable sizes.

  2. Prepare Vegetables: Wash and cut vegetables into bite-sized pieces.

  3. Combine Ingredients: Place vegetables and smoked eggs in a bowl.

  4. Prepare Dressing: In another bowl, mix olive oil and lemon juice to create the dressing.

  5. Combine and Season: Pour the dressing over the vegetables and eggs, gently toss.

  6. Adjust Seasoning: Season with salt and pepper to taste, and it's ready to enjoy!

  • Mayonnaise

Instructions:

  1. Toast the Bread: Toast the bread until lightly golden.

  2. Prepare Ingredients: Slice the avocado, and prepare tomato and lettuce.

  3. Spread Mayonnaise: Spread mayonnaise on the toasted bread.

  4. Assemble the Sandwich: Layer the smoked eggs, avocado, tomato, and lettuce between the bread slices.
