Smoking Method: Warm Smoking

Temperature and Time: Avocado is a delicate ingredient, and smoking it at high temperatures can sometimes overripen it. Therefore, cold smoking is recommended.

The temperature for cold smoking typically ranges from 70 degrees to 90 degrees Celsius.

The smoking time is usually around 1 to 2 hours. However, the smoking time and temperature can vary depending on the thickness and type of avocado as well as the performance of your smoker. Adjust gradually to find your preferred level of smoked avocado.

 

Ingredients

・Ripe avocados
・Smoking chips (Choose recommended fruity wood chips, see chip recommendations at the bottom of the recipe)
・Salt
・Olive oil
Instructions

1.Cut the avocado:
Slice open the ripe avocados, remove the pit, and cut them into suitable-sized pieces. Be careful not to damage the flesh while peeling.

2.Sprinkle with salt:
Sprinkle salt on the cut side of the avocados. You can also add other seasonings according to your preference.

3.Prepare the smoking chips:
If using a smoking device, soak the smoking chips in water for a while and then drain the excess water. This helps the chips burn longer during smoking.

4.Smoke the avocados:
Place damp smoking chips. Place the avocados on the grill grate and put them inside the smoking device. Close the lid and smoke the avocados at medium indirect heat. Smoking time may vary depending on the size of the avocados, but a general guideline is around 10-20 minutes.

5.Finish with olive oil:
After smoking, drizzle the avocados with olive oil to enhance the flavor.
